Bunless Burger: Lettuce Wrap, Protein Style & Calories
Burger Without the Bun: The Quick Answer
A homemade burger without the bun has between ~400 and 650 kcal, depending on the ingredients (compared to 750–900 kcal with the bun). It goes by “burger on a plate,” “lettuce wrap,” “protein style,” or “keto burger.” Ditching the bun saves you about 250–300 kcal.
When a guest asks me how much difference removing the bun makes, I give them the same answer: VBC’s brioche bun is a work of art, but if your goal is to cut calories or carbs, skipping it saves you roughly a third of the total calories. A classic cheeseburger with the bun and all the fixings clocks in around 870 kcal; without the bun, it’s about 600 kcal. And if you also go easy on the sauces, you can bring it down to 510 kcal. It’s not magic—it’s kitchen math.
What’s a Burger Without the Bun Called? The Names
The most common way to order it in Latin America and Spain is “hamburguesa al plato” (burger on a plate): the protein and toppings are served on a plate, with utensils, like a steak. But there are other names depending on the technique or trend:
- Protein style (popularized by a California chain): the burger is wrapped in lettuce leaves instead of a bun.
- Lettuce wrap burger: same concept, emphasizing that the lettuce acts as the “bun” and you eat it with your hands.
- Naked burger: a “naked burger,” no bun or wrap, served on a plate.
- Keto burger / low‑carb burger: niche terms for those following ketogenic or low‑carb diets.
Each name reflects a different way of presenting it, but they all share the essentials: the flavor of the meat and quality ingredients without the bun as the middleman.
How Many Calories in a Burger Without the Bun

Here are the approximate numbers for the most common components in a gourmet burger:
| Ingredient | Amount | Calories (~) |
|---|---|---|
| 80/20 beef patty (5.3 oz / 150 g) | 1 unit | 400 kcal |
| Brioche bun | 1 unit | 250–280 kcal |
| Cheddar cheese | 1 slice | 110 kcal |
| Bacon | 2 strips | 90 kcal |
| Mayonnaise | 1 tbsp | 90 kcal |
| Ketchup | 1 tbsp | 20 kcal |
| Lettuce + tomato + onion | to taste | ~15 kcal |
With those numbers, we can compare versions:
| Version | Calories (~) |
|---|---|
| Full cheeseburger with bun | 870 kcal |
| Same without bun | 600 kcal |
| Without bun and without mayo | 510 kcal |
Heads up: these are estimates. Patty size, cheese type, and brand of cured meats change the numbers. In our kitchen, we weigh every portion, but at home I recommend using a scale if you want precision.
Does a Burger Without the Bun Make You Gain Weight?
I’m a cook, not a nutritionist, so I’ll speak from experience and common sense. A burger without the bun has fewer calories and carbs, but it’s not automatically “light.” The fat from the meat (even 80/20), the cheese, the bacon, and the sauces still pack a considerable amount of energy. What makes you gain weight or not is your total daily balance.
If your goal is to lighten it even more, you can:
- Use leaner meat (90/10 or 93/7).
- Swap the protein for grilled chicken or turkey.
- Cut back on sauces or replace them with mustard, Greek yogurt, or avocado.
- Skip the cheese and bacon (though that’s a personal call).
At VBC, we respect all eating styles, but we also believe a good burger is meant to be enjoyed with all its components… or without them, if that makes you happy.
And if you want to lighten it even more, swap the beef for chicken: my healthy chicken burger works perfectly in a bunless version. And if your thing is not giving up the bun but choosing a better one, check out my healthy burger bun guide with a homemade whole-wheat recipe.
3 Ways to Make a Burger Without the Bun at Home
On a Plate
Cook the patty as usual, place it on a flat plate, and add your favorite toppings (cheese, caramelized onion, pickles, lettuce, tomato). Eat it with a knife and fork, like a steak. Pair it with a fresh salad or avocado slices. Ideal for those who want the full experience without getting their hands dirty.
Lettuce Wrap
Use large iceberg or romaine lettuce leaves as the “bun.” The technique:
- Wash and thoroughly dry the leaves.
- Place two overlapping leaves (the larger one on the bottom, another on top in the opposite direction for sturdiness).
- Put the hot patty, cheese, and toppings on.
- Close it like a taco and wrap with wax paper or a napkin to hold it together. Works best with ingredients that don’t release too much water (avoid very juicy tomatoes; pat them dry with paper instead).
Burger Bowl
Chop everything into pieces and serve it in a bowl over a bed of greens (lettuce, spinach, arugula). Add the patty crumbled or sliced, shredded cheese, cherry tomatoes, thin red onion rings, pickles, and a light dressing (vinaigrette or mustard). It’s the closest version to a full salad, with the flavor of a burger. Perfect for those who want to skip the bun and add volume with veggies.
Quick Recipe: Lettuce Wrap Burger (for 2)

| Ingredient | Amount |
|---|---|
| 80/20 ground beef | 14 oz (400 g) |
| Iceberg lettuce | 8 large leaves |
| Cheddar cheese | 2 slices |
| Tomato | 2 thick slices |
| Red onion | 4 thin rings |
| Pickle slices | to taste |
| Mustard or light mayo | 2 tbsp |
Steps:
- Divide the meat into two 200 g portions. Form patties about 1.5 cm thick, slightly larger than the diameter of the lettuce (since they’ll shrink when cooking). Season with salt and pepper right before cooking.
- Heat a cast-iron skillet or grill over high heat. Sear the patties for 3–4 minutes per side for medium doneness. In the last minute, place a slice of cheese on each and cover the pan to melt.
- While the meat cooks, prepare the lettuce leaves: wash them, dry them well, and pick the 4 largest for the base. Place two overlapping leaves in a cross shape on a plate.
- Assemble: put the patty with cheese on the leaves, then the tomato, onion, pickles, and a touch of mustard or light mayo. Cover with two more lettuce leaves.
- Wrap with wax paper or a napkin to keep it firm while eating. Serve immediately.
What to Serve with a Burger Without the Bun
If you’re avoiding the bun, it makes sense to look for sides that don’t include it. My favorite alternatives:
- Coleslaw (sugar-free): with a mustard or yogurt vinaigrette, no heavy mayo.
- Avocado halves or slices: adds creaminess and healthy fats.
- Grilled vegetables: zucchini, eggplant, peppers, and grilled onions.
- Baked sweet potato chips: slice sweet potato into thin rounds, bake with olive oil and salt. They’re more nutritious than fries.
- Pickles: add acidity and crunch with almost no calories.
I’ll admit, at VBC we love our homemade fries (knife-cut, double-fried), but if you’re in low‑carb mode, these options will save the day without sacrificing the pleasure of a burger side.
By the way: the patty deserves the same care with or without the bun. The tricks for 80/20 meat, a center dimple, and searing without pressing are all in my grilled burger recipe.

Our burgers are born for our homemade brioche bun: fluffy, slightly sweet, toasted in butter. That’s the full experience we offer in El Millón, Santo Domingo. But we understand light days, diets, or simply the craving to enjoy the meat in its purest form.
The quality of good grilled meat can be appreciated even with a knife and fork. So, even though our menu is designed to be devoured with both hands, we respect any way of eating a burger. If you’re in Santo Domingo, come visit us or order delivery. Ask for your burger without the bun, and we’ll put it together on a plate or as a lettuce wrap. You decide.
Frequently Asked Questions
How many calories in a homemade burger without the bun?
Between 400 and 650 kcal, depending on patty size, cheese type, bacon, and sauces. Most of the calories come from the meat and added fats.
What’s a burger without the bun called?
The most common names are “burger on a plate,” “lettuce wrap,” “protein style” (popularized by In‑N‑Out), “naked burger,” and “keto burger.” In Latin America, ordering it “al plato” is the norm.
Is a burger without the bun keto?
Yes, as long as the other ingredients don’t have added carbs (avoid sugary sauces, breadcrumbs in the meat, etc.). A burger with patty, cheese, bacon, lettuce, and mustard fits perfectly into a ketogenic diet.
What lettuce is best for a lettuce wrap?
Iceberg lettuce is the firmest and crunchiest, holding up well to the filling without tearing. Romaine (outer leaves) or butterhead also work if you can get large, flexible leaves. Avoid very loose or watery varieties.
Does a burger without the bun make you gain less weight?
In absolute terms, yes: it has fewer calories and carbs. But “gaining weight” depends on your total daily calorie intake. It’s a positive change if you’re looking to cut carbs or calories, but it’s not a free pass to eat without limits.
