To that Bella Vista comes Valerio Burger Club, chef Andrés Valerio's project from El Millón. No frozen patties, no industrial shortcuts: every brioche bun is slow-fermented and made in-house; our premium beef blend, at 18% fat, is ground fresh daily; and our house smoking —short ribs, brisket, bacon, gouda— takes hours of work. The sauces are chef-made: Korean Mayo, VBC Special Sauce, confit garlic, black garlic. We serve dinner Tuesday to Sunday from 5:00 p.m. (closed Mondays).
